According to the site's documentation (http://api.bnf.fr/api-iiif-de-recuperation-des-images-de-gallica), after opening the page you want the .jpg for, you change the URL like this -

From:
https://gallica.bnf.fr/ark:/12148/btv1b101005359/f23.item.zoom

To:
https://gallica.bnf.fr/iiif/ark:/12148/btv1b101005359/f23/full/full/0/native.jpg

To download an entire book you'd have to either select the pages you want by hand, or make some sort of script to get a string of URLs for all pages.
You can then quickly modify all of them into the .jpg URL by replacing the necessary parts in notepad.
